Rosé starts in the vineyard. We harvest Grenache earlier than we would for a traditional red wine in order to preserve acidity and maintain freshness.
At the beginning of the growing season, grapes are small, firm, and extremely acidic. As they ripen, the berries grow larger, sugars begin to rise, and acidity gradually softens. Once veraison begins and the grapes shift from green to purple, sugar accumulation accelerates quickly.
The art of making rosé from red wine grapes is finding the right balance. We want enough ripeness to develop bright fruit flavors, but we pick before the sugars become high enough for a heavier-style red wine. During fermentation, sugar converts to alcohol, and most people prefer rosé with lower alcohol and vibrant acidity. That natural acidity is what gives rosé its brightness and makes it one of the most versatile food pairing wines.
After harvest, the juice spends a short amount of time on the skins before pressing. This brief skin contact gives the wine its delicate color and fresh aromatics without adding heaviness or excessive tannin. The result is a dry rosé with crisp acidity, fresh fruit character, and enough structure to pair beautifully with food.
Pair with: seafood, summer salads, fresh fruit, Thai/Indian food, charcuterie, and even BBQ.
