Tasting Notes:
The 2007 vintage is a rich, fruit driven wine showcasing
layers of rich, fruit flavors with pepper and clove spice.
This is the third year we have sourced fruit from Osgood
vineyard. The vineyard is approx. 15 years old and is
a head trained, organic and dry-farmed vineyard located
on Chimney Rock Road. Year after year it tends to give
us a distinct, pleasing peppery element. The Cocovin
vineyard is new to us and is located in the middle of
Adelaida Road just across from Adelaida Cellars. It is
a trellised, irrigated vineyard that shows really nice,
rich fruit flavors.

Tasting Notes:
Don’t let the pink color throw you off. This
is not a sweet Rosé but rather a refreshing, fruity,
dry wine made from red wine grapes. See for yourself
why Rosé’s are so popular in France. It
has a big mouth feel a nice crisp acidity and a light strawberry
aroma. Like a sparkling wine, this Rosé is
the perfect compliment to most foods, especially those
on the spicy side! Try it with Thai Food. This
is the ideal ‘red wine’ for the summer season!
Pairings: Spicy!!! Thai
Food, Mexican Food, Indian Food, Sausage, Pizza Tri-tip. Or,
goat cheese or gorgonzola inspired appetizers. Have
fun!

Tasting Notes:
Don't let the pink color discourage you from trying this wine. This is not a
sweet wine, it is a dry Rose'. We simply keep the juice on the skins for 72
hours during fermentation. Then we press the skins off which leave the beautiful
pink color. This wine is a wonderfully balanced wine that is the perfect compliment
to all foods and can be served chilled or at room temperature. This crisp,
refreshing, dry style Rose' has notes of strawberry and apricot with a slight
toasty characteristic. It is an ideal celebration wine!

We kept the fruit on the skins for 24 hours, then pressed the fruit off and
fermented it dry. This wine is fruity and full in flavor with overtones of
spice. It is an ideal food pairing wine and a perfect wine to share with friends
on a hot afternoon. We recommend you serve it chilled. |

Tasting Notes:
Perfect for anytime. Don't let the pink color throw you off - this is not a sweet
wine. It is fruity, full in flavor and has overtones of spice. It is a dry
Rose' made from the Grenache fruit (a red wine). It only spent 24 hours on
its skin to develop the spectacular raspberry color. This wine drinks at its
best at room temperature because it is technically a red wine. It is wonderful
with most foods or by itself.

Tasting Notes:
We usually blend our Mourvèdre with our Syrah, Rosé and
Cuvée to add a little dimension to the wines. However,
this year we did a special bottling on Mourvèdre so
you could try this obscure blending grape
on its own. Flavors of blackberry jam, red fruit
berry and vanilla make for a nice rich wine. Go ahead
- try it!
